Your first water-kefir fermentation
Water-kefir grains are different from milk-kefir grains. Follow the culture supplier for the exact sugar and mineral balance.

Prepare the sugar water
Dissolve the sugar fully, then let the liquid cool before it touches the grains.

Ferment with a breathable cover
Use a clean container and keep insects and dirty utensils away from the culture.

Strain before flavouring
Remove the grains first. Add fruit or flavour only after the main fermentation unless your culture instructions say otherwise.

Treat sealed bottles as pressure
Use a bottle made for carbonation, leave headspace, chill it before opening, and point it away from faces.

How to flavour water kefir
Fresh orange is pressed on a citrus juicer before the juice is added to strained water kefir. Flavouring the finished drink is a separate step from feeding the grains.
