How to Make Milk Kefir With Living Grains
Start with 15 to 30 g of active grains and 500 mL of fresh pasteurized milk. Keep the setup simple, watch the jar instead of trusting a timer alone, then strain and refrigerate when the aroma is cleanly acidic and the milk has visibly changed.

Set up the first batch
Wash the jar, strainer, and spoon with hot soapy water, rinse well, and let them dry. Put the grains in a 1 L glass jar, add the milk, and cover the jar with a clean breathable cover that keeps out dust and insects.
Keep the jar out of direct sun. A room around 20 to 25°C gives a useful starting range. Taipei summers can move a batch quickly, so begin checking earlier in a warm room.
Decide when it is ready
Tilt the jar gently. Milk that coats the glass, smells cleanly acidic, and has begun to thicken is fermenting. Small whey pockets show that it has moved further. Clear curd and whey separation is usually a stronger, more acidic finish, not automatic spoilage.
Strain with clean equipment, place the finished kefir in a clean covered container, and refrigerate promptly. Put the grains into fresh milk for the next batch.
What the first hours look like
At first the jar still looks like milk with soft cauliflower-like grains inside. As acid builds, milk begins to cling to the glass and the body becomes less fluid. The aroma moves from fresh milk toward clean yogurt-like tartness. Small bubbles or a faint yeasty note can appear because yeasts share the culture.
The first tiny pockets of pale whey often appear near a grain or at the bottom. That is a useful late-stage cue, not a command to wait for the whole jar to split. If you want mild, smooth kefir, strain around the first visible pockets. A heavily separated jar will be sharper and may blend back together, but it has moved past the mildest point.
Why the clock changes from batch to batch
Fifteen grams of active grains in a cool room will not move like 30 grams in summer heat. Milk temperature, grain activity, milk volume, room location, and the residue carried from the previous batch all affect speed. This is why “24 hours” is a checkpoint, not a guarantee.
For the first two or three batches, keep the milk, grain amount, jar, and location stable. Check earlier than you think you need to. A repeatable mild batch teaches you more than waiting for dramatic separation and then trying to repair the flavour.
Straining is the end of one stage, not all fermentation
A broad, gentle strainer makes it easier to separate grains without crushing them. Stir the thickened milk just enough to help it pass, return the grains to fresh milk, and refrigerate the finished kefir promptly. Do not rinse healthy milk-kefir grains after every batch; the coating around them is part of their working environment.
The strained drink continues to sour slowly in the refrigerator. Taste it cold after a few hours, when the texture has settled. If you want fruit or another flavour, add it to the portion you will drink rather than changing the grain jar before you know its normal rhythm.

Do not extend a doubtful batch indefinitely
If the milk still looks and smells almost unchanged at 24 hours, do not keep waiting and tasting. Use the measured pH method or discard the liquid. A visible contaminant or sharply abnormal smell means discarding both liquid and grains.
What beginners notice in the jar
Must I avoid stainless steel?
No. Brief contact with clean stainless steel is suitable. Avoid prolonged contact with reactive aluminium, copper, or iron.
Do I need an airtight lid?
Use a clean breathable cover for this milk-kefir method. Refrigerated storage uses a fitted lid.
Is separation failure?
No. Separation usually means fermentation moved further and the result will taste more acidic.
