What makes kefir different?
Kefir begins with a mixed culture in which bacteria and yeasts work together. Traditional milk kefir and water kefir use their own reusable grains. Milk-kefir fermentation uses part of the lactose and brings microbial enzymes into the meal. That is why adults with lactose maldigestion handled it better than milk in a controlled study. Human studies have also found more regular bowel movements, softer stools, steadier fasting glucose, better insulin resistance, and changes in gut-microbial activity.
