What Is Kefir? How It Differs From Yogurt

Kefir is a fermented food made by growing bacteria and yeasts in milk or a sugar-containing liquid. It is related to yogurt, but the culture system, texture, and production method are different.

What exactly is kefir?

Kefir is a fermented food. In practical terms, desirable microorganisms grow in the food and use enzymes to change some of its components. Traditional milk kefir uses kefir grains. Commercial kefir may use grains, a prepared culture, or selected microorganisms added during production.

The name kefir therefore does not guarantee that every product has the same microbial community or the same fermentation profile.

Milk kefir and water kefir

Milk kefir

Milk kefir is made by fermenting milk. It is usually tangy and pourable, with a thinner texture than many yogurts. Fermentation may reduce part of the lactose and change the way milk tastes and behaves, but milk kefir is not automatically lactose-free. It still contains dairy proteins and may still contain lactose.

Water kefir

Water kefir is made by fermenting a sugar-containing liquid with water-kefir grains. It is not a nutritional substitute for milk kefir: it does not have the same protein, calcium, or dairy composition. Fermentation can produce carbonation and small amounts of ethanol, and the final amount varies with the ingredients and process.

Milk-kefir grains and water-kefir grains are different cultures adapted to different fermentation environments. They are not interchangeable.

What are kefir grains?

Kefir grains are reusable starter communities. Bacteria and yeasts live together in a grain-like matrix. You strain the grains out after fermentation and, when conditions are suitable, use them again.

The microorganisms vary between grains, batches, locations, and production methods. That is why homemade kefir can taste and behave differently from batch to batch.

What changes during fermentation?

  • Acidity and flavour.
  • Thickness and mouthfeel.
  • Some sugars, including part of the lactose in milk kefir.
  • Fermentation products such as lactic acid and carbon dioxide.
  • The food’s live-microorganism content, if the microorganisms survive later processing and storage.

The result depends on the ingredients, microorganisms, temperature, fermentation time, oxygen exposure, and later processing. Fermentation does not make an unsafe ingredient safe, remove every milk protein, eliminate all lactose, or guarantee a specific health effect.

The main difference is the culture system. Traditional kefir contains a mixed community of bacteria and yeasts, while yogurt is made with a more defined bacterial starter culture. More microbes does not automatically mean better, and there is no universal rule that kefir is healthier than yogurt.

Homemade and commercial kefir

Homemade kefir lets you use reusable grains and choose the ingredients, but the results vary more. Acidity, microbial composition, carbonation, and alcohol content can change with the grains, milk or sugar solution, temperature, timing, and hygiene.

Commercial kefir is usually produced under more controlled conditions. Some products are heat-treated after fermentation, which can reduce or remove live microorganisms. Check storage instructions, added sugar, heat treatment, and live-culture information on the label.

Is kefir a probiotic?

Not automatically. The ISAPP consensus definition says that a probiotic is a live microorganism that, when administered in adequate amounts, provides a health benefit to the host. That requires evidence for the specific microorganism, amount, and claimed benefit.

Kefir can contain live microorganisms, but live microorganisms alone do not make a food a probiotic. A fermented food may also contain fermentation products that matter even when the original microbes are no longer alive.

The practical answerKefir is not automatically healthier than yogurt.

Choose the food that fits your diet, tastes good to you, and causes no unwanted symptoms. For lactose digestion, one small controlled human study found similar results for plain kefir and yogurt, both better tolerated than milk by adults with lactose maldigestion. It tested single meals in 15 adults, so it cannot represent every person or product.

Safety basics

Use pasteurized milk or another pasteurized ingredient when making milk kefir. Pasteurization reduces harmful germs. Raw milk can carry pathogens, and fermentation is not a reliable substitute for pasteurization.

Use clean containers and utensils, follow the culture instructions, avoid cross-contamination, and refrigerate finished kefir. Discard a batch with unusual colour, fuzzy mould, rotten smell, or other clear signs of spoilage.

Who should be careful?

People who are pregnant, immunocompromised, very young, older, or medically instructed to avoid unpasteurized foods should be especially careful with homemade fermented foods. If you have a milk allergy, severe digestive symptoms, or a diagnosed condition requiring dietary restrictions, ask a qualified health professional before introducing kefir.
