How to Keep Milk Kefir Grains Healthy
Healthy grains need fresh pasteurized milk, a sensible ratio, regular feeding, and a stable routine. When a batch changes, check temperature, ratio, and feeding history before adding supplements or changing several things at once.

Make one useful change
Too many grains in too little milk can make the batch turn sharp and separate quickly. Too few active grains in too much milk can leave it moving slowly. Weigh the grains and milk when the old routine stops behaving normally.
Keep the same milk, jar, location, and ratio for another batch after one planned adjustment. Repeating the setup shows whether the change helped.
Pause and restart carefully
For a break of up to seven days, place healthy grains in fresh pasteurized milk, close the container, and refrigerate at 4°C or colder. Discard the storage milk when you return. Use fresh recovery batches until the grains again produce clean acidity and their familiar texture on a dependable schedule.
Judge the grains by their work
Healthy grains acidify fresh milk repeatedly and produce a clean cultured aroma. Their size, shape, and growth rate can change. Some form large cauliflower clusters; others remain small, flat, or ribbon-like. A culture can ferment well without winning a beauty contest.
The useful baseline is functional: how much milk the grains acidify, at what room temperature, over roughly how long, and what the finished aroma and texture are. Compare a changed batch with that baseline before deciding the grains are weak.
Most problems begin with a changed routine
A sudden heat wave, colder room, different milk, more grains, longer delay between feedings, or a refrigerator break can all change the next jar. The culture may need several normal feedings to settle after shipping or storage. That is adaptation, not proof of contamination.
Return to fresh pasteurized milk, a moderate ratio, and a stable room location. Change the milk on schedule even when the first recovery batches are not pleasant enough to drink. Watch for reliable acidification and clean aroma returning across several batches.
More intervention can make the culture harder to read
Adding cream, milk powder, minerals, sugar, eggshell, several milks, or a new temperature at the same time creates a new experiment, not a rescue. If the next batch improves, you will not know why. If it worsens, you will not know what to remove.
Use the smallest correction that matches the change. A faster summer jar needs less grain, more milk, an earlier finish, or a cooler spot. A slow post-fridge culture usually needs repeated room-temperature feedings. A milk allergy needs a genuinely dairy-free culture, not rinsed milk grains.
Growth is optional; dependable acidification is not
Some healthy cultures gain mass quickly while others hold a similar weight for weeks. Milk, temperature, handling, and the grain community all affect growth. Do not add sugar, supplements, or unusual milk only to chase a larger number on the scale.
If the grains repeatedly make clean kefir on schedule, they are doing their job. Photograph and weigh them monthly if growth interests you; daily inspection turns normal variation into a problem.
