First, is it safe?

Visible mold or fuzzy growth, pink or another unusual colour, a rotten or chemical smell, a damaged or bulging container, or an unknown temperature history are discard conditions. Do not scrape the top, taste a questionable batch, or try to rescue the grains that touched visible mold. Discard the milk and those grains, then clean the equipment.
If the kefir is simply thinner, thicker, sourer, or more separated than usual, safety and quality are different questions. Use smell and appearance to find obvious spoilage, but remember that they cannot prove a batch is safe. When the handling history is uncertain, discard it.

What changes texture and sourness?

Time and temperature
Fermentation is not governed by a perfect timer. Warmer surroundings generally speed changes, while cooler surroundings slow them. A household study and controlled experiments use defined temperatures and durations so researchers can compare batches. Your kitchen, jar size, grain activity, and milk may be different. Watch for the texture and acidity you want, then strain and refrigerate promptly.
Milk type
Milk differs in fat, protein, solids, and heat treatment. Those differences can change body, separation, and the way the batch tastes. Research has compared pasteurized and UHT milks with different results across setups. Do not assume that UHT milk is always better or always worse. When texture changes after a milk switch, return to one milk and compare several batches before blaming the grains.
Recent revival, refrigeration, or transport
Grains coming back from cold storage or a journey may not behave like an established room-temperature culture immediately. Keep the next batches simple. Use safe milk, clean equipment, a stable location, and the same working ratio. Judge the trend across several batches, not one thin or sour jar.
A one-variable reset
- Write down the milk, grain weight, milk weight, room location, and what the last batch looked and smelled like.
- Keep everything the same for the next batch except one planned change, such as using more milk.
- Check the jar during fermentation. Strain when the texture and acidity suit you, rather than waiting for a universal clock time.
- Repeat the same setup once more before making a second change. This makes the result easier to understand.
You do not need to stir by default, create a sealed bottle, or chase visible bubbles to diagnose texture. Mixing after straining can change how the kefir feels in the glass, but it cannot undo acidity or make an unsafe batch safe.

Is thin milk kefir spoiled?
No. Thinness alone is not a spoilage sign. Check the smell, colour, growth, container, and handling history. If any of those are questionable, discard it.
Why is my kefir grainy?

Should I add more grains to thicken it?

Does UHT milk cause thin kefir?

Are bubbles required?
