Use what you have
Do not let good kefir become a fridge problem
Choose exactly what is left. You will get recipes that match that ingredient, not a generic pile of “kefir ideas.”
Finished milk kefir
Use it where tenderness, tang, or a creamy finish helps
Keep it cold and choose by the meal you want. Kefir can loosen a dressing, tenderize a marinade, or bring gentle acidity to a batter.
Finished water kefir
Turn a clean first ferment into a flavour you will actually drink
Choose fruit, citrus, herbs, tea, or warming spice. The flavour lab keeps all 24 complete bottle recipes together.

Treat it like a fresh tangy spread
Season it after draining, keep it refrigerated, and build the flavour around the meal instead of making every bowl taste the same.
Clear kefir whey
Use a small measured amount in a sharp dressing
The current library has one fully specified whey recipe. It uses two tablespoons, then relies on vinegar, mustard, oil, and seasoning for balance.
Very sour but sound milk kefir
Put the extra acidity into baking
Use only a batch that smells clean and has no fuzzy or unusual coloured growth. In dough or batter, a strongly tangy batch can still be useful.
