Kefir Garlic Flatbread Sauce

Spoon cool garlic-parsley kefir over a piece of hot flatbread just before eating. The bread stays crisp at the edges while the sauce settles into its warm folds.

Make it

Method

  1. Whisk the kefir, salt, and listed flavor ingredients until the sauce is even.
  2. Refrigerate for 15 minutes, then taste and adjust the salt.
  3. Spoon over warm flatbread just before serving, or place it on the table as a cold dipping sauce.
  4. Keep the unused sauce covered at 4°C or below and use within three days. Serve bread freshly warmed.

Garlic sauce meets warm bread

Kefir softens raw garlic and carries the olive oil without becoming heavy. Warm bread releases the parsley and garlic aroma while the sauce itself stays cool.

Store it

Keep it covered in the refrigerator and use it within 3 days. Stir before serving.

Choose the kefir thickness

Use drinkable milk kefir for a dressing and strained milk kefir for a dip. That change works better than trying to thicken a thin sauce with extra seasoning.

Too sharp or too thin?

Too sharp? Add a little more plain kefir. Too thin? Chill it first, then whisk in strained kefir one spoonful at a time.
