Kefir Avocado Lime Sauce

Ripe avocado turns kefir into a smooth green sauce for tacos or grilled vegetables. Add the lime after blending and taste as you go: a tart batch of kefir may need less.

Make it

Method

  1. Roughly chop the larger flavor ingredients so they move freely in the blender or food processor.
  2. Blend avocado, kefir and coriander until smooth. Add the lime juice a little at a time, tasting before using all 2 teaspoons. Scrape the bowl with the machine stopped.
  3. Refrigerate for 15 minutes, then taste. Add salt or a few drops of citrus only if the finished sauce needs it.
  4. Transfer to a clean covered container and refrigerate until serving.

Choose an avocado that yields gently

A hard avocado stays lumpy; a ripe one gives when pressed gently near the stem. Cut away damaged flesh and use sound fruit. Make it just before shrimp tacos and keep it cold until assembly.

Store the finished sauce

Cover and refrigerate at 4°C or below. Use within one day, or sooner if an ingredient requires it. Stir before serving.

A thicker dip or a pouring sauce

For a thicker dip, use strained milk kefir. For a pourable sauce, use plain drinkable milk kefir.

When the blender stops moving

If the blades cannot move, stop and scrape the bowl before adding liquid. Add kefir one spoonful at a time so the sauce does not become watery.
