Peach Oolong Kefir Granita

A fork turns peach, oolong and kefir into loose ice crystals. Scrape the tray as the edges freeze, then spoon the finished granita into cold bowls. The tea adds fragrance and caffeine.

Method

Four illustrated panels show peach, kefir and tea, the blended liquid, a shallow frozen tray, and crystals scraped with a fork.
Freeze in a shallow pan and scrape every 30 to 45 minutes to build fine crystals.
  1. Remove the peach stone. Blend the peach, kefir, chilled oolong and honey until smooth, then pour into a shallow metal pan in a layer about 2 cm deep.
  2. Freeze for 45 to 60 minutes, until ice begins to form around the edges.
  3. Pull the frozen edges toward the center with a fork. Repeat every 30 to 45 minutes, breaking up large pieces each time.
  4. After about 4 hours, scrape once more and spoon the loose crystals into cold bowls.

Scrape the edges into the middle

The edges freeze before the centre. Each scrape breaks that ice into smaller pieces and moves the unfrozen mixture towards the cold pan. Keep working across the whole tray rather than only scratching the top.

Store it

Keep it covered in the freezer and scrape it again before serving. Use within 1 week.

Changing the fruit or tea

Another ripe stone fruit can replace the peach. Keep the tea cold and strong so it adds flavor without melting the mixture.

If the tray freezes into a block

Long freezing or missed scraping can leave a hard block. Let the surface soften just enough to scrape, then break it into crystals with a fork. Return it to the freezer briefly if it becomes slushy.
