Passion Fruit Banana Kefir Smoothie
Banana smooths the sharp edges of passion fruit without hiding its perfume. The seeds remain as small tart bursts throughout the creamy drink. This is a thick, tart smoothie built around plain milk kefir. Frozen fruit makes it cold and creamy without needing a large amount of added sugar.

Method

- Put the milk kefir and all flavor ingredients in a blender.
- Blend until smooth. Add 1 to 2 tablespoons of cold water only if the mixture is too thick to move.
- Taste before sweetening. Pour and drink straight away.

Kefir supplies the creamy liquid base while fruit gives body and sweetness. Strong additions such as cocoa, ginger, tea, or sesame keep the drink from tasting flat.
Store it
This tastes best straight from the blender. If needed, cover and refrigerate it for up to 24 hours, then stir before drinking.
A substitution that works
Replace the fruit with the same weight of another frozen fruit. An unsweetened soy kefir can replace milk kefir, but the flavor and thickness will change.
If the texture is wrong
Too thick? Add cold water or kefir one tablespoon at a time. Too thin? Blend in more frozen fruit instead of more ice.
