Banana Cocoa Kefir Soft Serve

Frozen banana does the work here: blend it with cocoa and just enough kefir to make a thick, spoonable dessert. Stop adding liquid as soon as the blades can move, or your soft serve will become a smoothie.

Method

  1. Put the frozen banana pieces, cocoa and 120 ml kefir in a food processor suitable for frozen fruit.
  2. Pulse, scrape down the bowl, then process until thick and smooth. Add extra kefir one tablespoon at a time only if the blades stop moving.
  3. Spoon into two cold bowls and eat immediately. For a firmer texture, freeze for 20 minutes, not several hours.

The banana supplies the frozen base

Frozen banana supplies the ice and structure that an ice-cream machine would normally create. Cocoa sharpens the flavor, while a controlled amount of kefir adds tang without making the mixture pourable.

Store it

Press a cover onto the container and freeze for up to 1 week. Let a hard batch soften briefly before scooping.

Keep the banana base

Banana provides the structure here. For a different fruit, use the stirred blueberry frozen dessert rather than swapping watery fruit into this formula.

If it becomes too liquid

Stop adding kefir. Chill the mixture in a shallow container for about 20 minutes and check again; once fully frozen it will need softening before serving. There is no repeated-stirring schedule for this recipe.
