Kefir Caesar Chicken Wraps

Strained kefir replaces the heavy dressing in this chicken Caesar wrap. The filling stays creamy, but dry enough for the tortilla to close cleanly.

Method

  1. Whisk the kefir, Parmesan, lemon, oil, mustard, anchovy, garlic, and pepper until smooth.
  2. Warm the tortillas just until flexible. Do not make them crisp.
  3. Toss the chicken and very dry romaine with the dressing until lightly coated. No sauce should pool in the bowl.
  4. Divide between the tortillas, fold in the sides, roll firmly, and place seam-side down before cutting.

A little dressing goes a long way

Kefir brings the cultured tang a Caesar dressing needs. Parmesan and anchovy supply savory depth, so a small amount coats the whole filling.

Pack the components cold

Use safely cooked, chilled chicken. Keep chicken, dressing and lettuce at 4°C or below and assemble just before eating. Use within two days, counting from when the chicken was cooked, and keep an ice pack with a packed lunch.

Capers instead of anchovy

Replace anchovy paste with 1 teaspoon capers for a fish-free version.

Stop a wrap from leaking

If the wrap leaks, dry the lettuce better and use less dressing rather than adding more tortilla.
