What to record for every batch

Record the date, culture type, ingredient source, grain weight, liquid weight or volume, room location, starting temperature, start time, check times, aroma, visible changes, pH readings when used, strain time, finished flavour, and what you will do next.

How the four batches work

Use the same setup for batches one and two. In batch three, change only the variable you can name clearly, such as more milk, a different water source, or an earlier finish. Repeat that exact change in batch four. If the result repeats, you have a useful pattern.

Write observations, not verdicts

“Bad batch” cannot be compared. “Thin after 20 hours, clean yogurt-like aroma, no whey pockets, room 21°C” can. Use words that describe what you saw, smelled, timed, or measured before deciding what it means. Sensory detail is data when the terms stay consistent.

Choose a few repeatable scales. For aroma, use fresh milk, lightly tart, fully cultured, yeasty, or off. For texture, use pours like milk, coats the glass, spoon-coating, first whey pockets, or heavy separation. Your categories do not need to be scientific; they need to mean the same thing next week.

The fourth batch is where a hunch becomes useful

One changed batch may reflect the weather, a different milk carton, sampling time, or chance. Repeating the same change shows whether the pattern returns. If it does, keep the adjustment. If it does not, return to the baseline instead of stacking another correction on top.

A four-batch journal is especially useful across a seasonal temperature shift, after refrigerator storage, when changing milk or water, or before and after reducing the grain ratio. It is not meant to turn breakfast into paperwork. Once the normal pattern is clear, stop recording until something changes.

Keep milk, water, and plant experiments in separate records

The same words can mean different things in different ferments. Thickening is a major milk-kefir clue but tells you little about water kefir. Bubbles can be obvious in water kefir and subtle in milk kefir. A plant drink may thicken because of its protein or added stabilizers rather than because it matches dairy fermentation.

Use one sheet or note for each culture and base. Record when an experimental grain portion leaves the parent culture, and never merge it back. This keeps the journal tied to a real microbial history instead of treating every jar labelled kefir as the same system.

Photograph one repeatable viewpoint

Place the jar in the same spot and photograph the side at each check, with the label and thermometer visible. The image can preserve whey pockets, fill level, grain position, and colour more accurately than memory. It cannot preserve aroma, taste, or handling, so keep the short written line too.

Delete routine images once the pattern is learned. Keep the journal as a tool for answering changes, not as an archive that makes fermentation feel like work.

Safety decisions come before tasting notes

If a batch has mold, unusual colour, insects, putrid or solvent-like odour, damaged packaging, or uncertain handling, record the reason and discard it without tasting.

How to keep the journal useful

Do I need to record everything forever?

No. Four careful batches are enough to establish a useful baseline. Return to the journal when the culture changes.

What is the best variable to change first?

Choose the one most likely to have changed already: temperature, ratio, milk, water, or timing.

Can I compare two changes at once?

You can, but you will not know which one produced the result. Keep the first comparison simple.
