Does Water Kefir Contain Alcohol?
Yes. Water-kefir yeast produces alcohol while bacteria produce acids and the culture releases carbon dioxide. The amount varies widely, so a homemade batch cannot be treated as alcohol-free unless that exact batch is tested.

Why the alcohol level changes
Water kefir is a mixed culture. Different grains contain different communities, and sugar concentration, oxygen, fruit, temperature, and fermentation time change what those microbes produce. Taste, sweetness, and fizz cannot tell you the exact alcohol concentration.
Treat second fermentation as pressure
A sealed bottle traps carbon dioxide. Use a pressure-rated bottle, leave at least 5 cm headspace, keep the warm stage short and controlled, refrigerate thoroughly, and open slowly over a sink. Never point the bottle toward a face.
Why a home recipe cannot promise zero alcohol
Yeasts convert sugar into ethanol and carbon dioxide. Bacteria convert other substrates into acids and can also interact with the alcohol. The balance changes with the grains, sugar, oxygen, temperature, time, fruit, bottle seal, and storage. Two jars following the same written recipe can finish differently.
Taste cannot verify the amount. A sweet drink can contain alcohol, and a dry-tasting drink can contain less or more than expected. Without a suitable analysis of that batch, the honest description is that homemade water kefir can contain alcohol.
More fizz usually means more yeast activity and more pressure
The same yeast pathway produces the gas people want and the alcohol they may want to minimize. A warm, sweet, tightly sealed second fermentation pushes that pathway while trapping carbon dioxide. This is why “make it very fizzy but alcohol-free” is not a controlled household promise.
Cold slows further fermentation and keeps more gas dissolved, but it does not undo alcohol already produced. Chill bottles fully before opening, and treat any hard, swollen, leaking, or damaged container as a pressure problem first.
When zero alcohol matters, choose a different product path
Pregnancy, childhood, medication interactions, recovery from alcohol use, religious practice, driving, workplace rules, and personal preference can all make uncertainty unacceptable. The practical solution is not to guess more carefully. Choose a commercially tested product with alcohol labelling that meets the required limit, or choose a non-fermented drink.
If small variable alcohol is acceptable, keep the first ferment reliable, use measured flavour additions, shorten warm sealed time, refrigerate promptly, and make small batches. These steps reduce uncertainty and pressure; they do not certify zero alcohol.
Decide before you seal the bottle
If your priority is flavour with the least pressure and alcohol uncertainty, drink the strained first ferment chilled or flavour it under refrigeration. If your priority is lively carbonation, accept that yeast activity, pressure, and some alcohol travel together, then use a small pressure-rated bottle and an observed schedule.
Write the decision and date on the bottle: still, lightly flavoured, or carbonated. A clear label makes it less likely that someone else will shake, warm, or open an active bottle as if it were ordinary juice.
