Peach softens into the kefir and perfumes the oats overnight. Almonds go on at the end, where their toastiness and crispness remain obvious. Method

- Stir the kefir, oats, chia seeds, fruit, and seasoning in a lidded jar. Keep the nuts separate so they stay crisp.
- Cover and refrigerate for at least 6 hours or overnight.
- Stir the oats, loosen with a spoonful of kefir if needed, then add the reserved nuts just before eating.
Why these flavors work
Rolled oats absorb liquid slowly, while chia thickens the mixture. Kefir brings acidity that balances sweet fruit and rich nuts.

Keep the jar covered and refrigerated. Eat it within 2 days, and add nuts or crisp toppings only when serving.
A substitution that works
Use another soft fruit in the same amount. Water kefir is not a direct substitute because it does not give the oats the same body.

Too thick in the morning? Stir in one spoonful of kefir. Too loose? Add a teaspoon of chia, wait 15 minutes, then check again.
