Overnight oats with kefir
Put the oats in the fridge tonight, but keep the walnuts out until breakfast. The oats will soften in the tangy kefir; the nuts will still crunch. Start with apple and cinnamon, then use the same method for the other combinations below.

Prepare tonight
Method
- Stir the kefir, oats, chia seeds, apple and cinnamon in the container. Cover. Keep the walnuts separately for serving.
- Refrigerate at 4°C or below for at least 6 hours or overnight, until the oats have softened. This is a refrigerated breakfast, not a room-temperature ferment.
- Stir well. If the oats are too thick, add a tablespoon of kefir or cold drinking water at a time. Add the walnuts just before eating.
Change the flavour
Use one combination with the oats base, instead of the apple, walnuts and cinnamon. Fruit ripeness and the thickness of your kefir will change the result.
The base stays the same: 180 ml kefir · 45 g rolled oats · 1 tsp chia.
- Tonight
- Mix, cover and chill at 4°C or colder for at least 6 hours.
- At breakfast
- Stir and adjust the thickness. Add the toppings kept for serving.
Why one jar sets firmer than another
The oats absorb liquid, and chia thickens it further. Thick kefir, sesame powder, nut butter and pumpkin can all make a denser breakfast. Juicy fruit can loosen it. There is no need to get the final texture exactly right the night before: stir and adjust it in the morning.
My oats are stiff enough to turn upside down
Stir in a tablespoon of kefir or cold drinking water, then check again. Next time, use less chia or more liquid. Adding dry oats now will make the problem worse.
There is liquid around the edges
Stir first; some kefir separates as it stands. If it is still looser than you like, a little chia can thicken it, but give the seeds time to hydrate in the fridge before eating. Next time, start with slightly less liquid.
Use rolled oats here. Steel-cut oats will not soften on the same schedule, and quick oats give a softer, less distinct texture.
If the packet says the oats must be cooked, follow that instruction rather than using them raw in this jar.
Keep it cold until breakfast
Make one jar for tomorrow, or enough for the next two mornings. Keep it covered at 4°C or below and follow any earlier storage limit on your ingredients. Add crisp toppings when you eat.
For the journey to work, use an insulated bag with an ice pack if you cannot refrigerate it promptly. The FDA’s cold-food guidance limits time out of refrigeration to two hours, or one hour above 32°C.
Milk kefir contains milk proteins; the choices above can also contain peanuts, tree nuts and sesame. Use ingredients that suit your allergies. A clearly dairy-free cultured soy drink can make a different version if soy suits you; water kefir will not give the same creamy result.
