- Line a sieve with clean cheesecloth or a reusable fine filter and set it over a bowl.
- Pour in the kefir, cover, and drain in the refrigerator for 12 to 18 hours.
- Transfer the thick kefir to a bowl and fold in the salt and flavor ingredients.
- Refrigerate in a clean container and use within 4 days.
