Do not stir it in. Do not save the bottom because it looks cleaner. Mold and other contamination are not required to stay in the part you can see.<\/p><p>If reusable grains touched the contaminated batch, discard those grains too. Wash the container thoroughly and replace porous, scratched, cracked, or damaged equipment that cannot be cleaned reliably. Discard the batch when you do not know how long the milk sat warm before inoculation, whether the finished kefir stayed refrigerated, what an unlabeled ingredient was, or why a seal leaked.<\/p><p>For grain-fermented milk kefir, the safe process has clear checkpoints. Use pasteurized milk, active grains, clean equipment, and a stable 20 to 25\u00b0C fermentation. The kefir should reach pH 4.6 or lower within 24 hours and no later than 36 hours. Once finished, strain it and cool it promptly to 4\u00b0C or colder.<\/p><p>If the pH does not reach 4.6 or lower by 36 hours, the batch has failed. Leaving it warm longer does not turn an unreliable start into a verified process.<\/p><p>These checkpoints matter because kefir&#039;s acidity and fermentation compounds inhibit many pathogens, but the short ferment does not reliably eliminate every pathogen introduced by raw milk, dirty equipment, contaminated ingredients, or poor handling.<\/p>\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<aside class=\"ktw-article-path\"><span>The next useful question<\/span><a data-no-translation-href href=\"https:\/\/kefir.tw\/en\/taking-a-break-from-making-kefir-a-beginners-guide-to-storing-and-reviving-grains\/\">Pause and revive grains without improvising<i class=\"fa-solid fa-arrow-right\" aria-hidden=\"true\"><\/i><\/a><\/aside>\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<h2>Decision 3: Are you looking at normal fermentation?<\/h2>\n\t\t\t\t\t\t\t\t\t\t<p>Milk kefir can look surprisingly untidy while remaining normal. It may thicken unevenly, form soft white curds, release pale yellow whey, or split into a thick upper layer and a watery lower layer. It can smell like yogurt, sour milk, bread dough, butter, or mild yeast. A little fizz is also possible.<\/p><p>Separation usually means fermentation continued further than your preferred finish. If the colour is normal, the aroma is clean, the process history makes sense, and the batch reached the acidity target, you can stir or blend the curds and whey back together. It will still taste more sour than a batch strained earlier.<\/p><p>Sediment and floating pieces can also be normal in water kefir, especially when fruit or less refined sugar was used. Plant-based kefir follows its base. Soy may set into a firm curd, coconut may split along its fat and water layers, and oat drinks may thicken partly because of starch or stabilizers.<\/p><p>Compare a batch with the normal pattern for that same base, culture, recipe, and container. White milk-kefir curds tell you nothing useful about a sugar-water ferment. A coconut layer is not automatically milk whey. &quot;Kefir&quot; is a family name, not one universal jar appearance.<\/p>\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<aside class=\"ktw-article-path\"><span>The next useful question<\/span><a data-no-translation-href href=\"https:\/\/kefir.tw\/en\/troubleshooting-thin-grainy-overly-sour-kefir\/\">See why a finished batch can be thin or separated<i class=\"fa-solid fa-arrow-right\" aria-hidden=\"true\"><\/i><\/a><\/aside>\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<h2>Smell is useful, but it is not a laboratory<\/h2>\n\t\t\t\t\t\t\t\t\t\t<p>Your nose is good at finding a rotten or sharply abnormal batch. It is not good enough to prove that a pleasant batch contains no pathogen.<\/p><p>Use smell as one part of the decision. Combine it with colour, ingredients, cleanliness, time, temperature, pH, container condition, and refrigeration. If those facts disagree, discard the batch. A normal aroma does not overrule a failed pH window or an unknown warm-storage history.<\/p>\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<h2>Bottle pressure needs its own decision<\/h2>\n\t\t\t\t\t\t\t\t\t\t<p>Fermentation can continue after straining. Yeasts produce carbon dioxide, and a sealed bottle traps it. Gentle fizz is normal; an unsafe container is not.<\/p><p>Use only pressure-rated bottles for deliberate sealed fermentation. Leave headspace, keep the bottle away from heat, refrigerate it before opening, and point the opening away from your face. Do not shake it first unless the ceiling asked for kefir.<\/p><p>Discard a bottle that is cracked, leaking, badly distorted, or so pressurized that it cannot be handled safely. Do not try to save a visibly damaged glass bottle by slowly loosening the cap beside your face.<\/p><p>Water kefir and long sealed ferments can also produce alcohol. Anyone who needs to avoid alcohol completely should choose a product whose alcohol content is controlled and labelled, rather than assuming homemade fermentation is alcohol-free.<\/p>\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<h2>A flavour problem is not always a safety problem<\/h2>\n\t\t\t\t\t\t\t\t\t\t<p>Kefir that is too sour, thin, yeasty, lumpy, or heavily separated may be unpleasant without being contaminated. If it has normal colour and aroma, a known clean process, proper acidification, and refrigeration, keep the grains and adjust the next batch.<\/p><p>Shorten the time, change the grain-to-liquid ratio, keep the temperature steadier, or use a different milk. Change one variable and compare. Throwing away healthy grains every time the texture changes prevents you from learning the culture&#039;s normal rhythm.<\/p><p>The reverse is also true. A smooth, attractive batch is not automatically safe when the milk was raw, the pH failed, the container leaked, or the storage history is unknown. Appearance is a clue, not a pardon.<\/p>\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<h2>Make the next batch easier to judge<\/h2>\n\t\t\t\t\t\t\t\t\t\t<p>Use pasteurized ingredients and safe drinking water. Clean your hands, work surface, jar, spoon, and strainer. Keep insects out. Label the base, culture, start time, flavouring, and refrigeration date. Measure pH while a culture is new or recovering.<\/p><p>Keep milk-, water-, and plant-kefir cultures in separate labelled containers. Do not return an experimental portion to the parent culture. A short note on the jar saves a great deal of detective work three days later.<\/p><p>Pregnant people, children under five, adults 65 and older, and people with weakened immune systems have a higher risk of serious foodborne illness. For these households, use pasteurized ingredients, reliable recipes, measured process checkpoints, and immediate refrigeration. An uncertain batch belongs in the bin.<\/p>\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<h2>If someone drank a questionable batch<\/h2>\n\t\t\t\t\t\t\t\t\t\t<p>Stop serving it and keep the label, recipe, ingredients, and timing record. Common food-poisoning symptoms include diarrhea, stomach pain, nausea, vomiting, and fever.<\/p><p>Seek medical care promptly for bloody diarrhea, diarrhea lasting more than three days, a fever above 38.9\u00b0C, repeated vomiting that prevents drinking, or signs of dehydration such as very little urine, dry mouth, or dizziness when standing. During pregnancy, fever with flu-like symptoms also needs prompt medical attention.<\/p>\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<h2>Questions people usually ask<\/h2>\n\t\t\t\t\t\t\t\t\t\t<h3>Is white curd with yellow liquid mold?<\/h3><p>Usually not. White curds and pale yellow whey are common when milk kefir ferments further. Fuzzy growth or an abnormal colour is different and means discard.<\/p><h3>Can I remove one moldy spot and keep the grains?<\/h3><p>No. Discard the liquid and every grain that contacted it.<\/p><h3>Can I prove safety by tasting a teaspoon?<\/h3><p>No. Taste cannot verify a failed or unknown process, and a small amount can still expose you to contamination.<\/p><h3>If it smells fine, is it safe?<\/h3><p>Not by smell alone. The ingredients, cleanliness, time, temperature, pH, container, and refrigeration history must also make sense.<\/p>\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<h2>The decision in one line<\/h2>\n\t\t\t\t\t\t\t\t\t\t<p>Keep a batch only when its appearance fits that kefir type and its ingredients, hygiene, time, temperature, acidity, container, and refrigeration history all make sense.
