If you only look after straining, all three can be called thin. The jar history separates them.<\/p><p>Before changing anything, write down four observations: whether the aroma became tart, whether milk coated the glass, whether small whey pockets appeared, and whether the jar ever held a soft curd. That takes less than a minute and tells you whether to speed up, wait, or finish earlier.<\/p><h2>If it never thickened, help the culture reach the finish<\/h2><p>Keep the same fresh pasteurized milk and move only one control. Give a clean-smelling batch more time, place the jar in a steadier moderate room location, or use a little more active grain next time. A practical starting bracket is 15 to 30 grams of active grains for 500 millilitres of milk around 20 to 25\u00b0C, but your grains decide where inside that range they work best.<\/p><p>A culture recovering from shipping, refrigeration, or neglect may need several ordinary milk changes before it thickens reliably. Use smaller batches while it recovers. If repeated fresh feedings do not develop clean acidity, solve the culture problem first; milk powder and cream cannot turn an inactive culture into an active one.<\/p><h2>If it separated, the thick stage already happened<\/h2><p>Acid first lets milk proteins form a loose network. With more acid and time, that network tightens and pushes out whey. Waiting for dramatic separation therefore does not build an ever-thicker drink. It carries a smooth gel past its best pouring point and into curd plus whey.<\/p><p>Next time, check earlier and strain when the milk clearly coats the glass, moves as one soft body, smells cleanly tart, and shows its first small whey openings. If the kitchen is warm, use fewer working grains, a little more milk that you will drink, or a cooler stable location. The goal is a wider finish window, not a more violent ferment.<\/p><h2>Choose milk for the texture you want<\/h2><p>Fat and protein do different jobs. More fat makes kefir taste rounder, richer, and less sharp. Protein gives the acidified milk more material from which to build a gel. A full-fat milk can feel luxurious without setting especially firmly; a higher-protein milk can hold more body even when it is not the fattiest carton.<\/p><p>Use one pasteurized milk for three batches before comparing another. Cow, goat, sheep, UHT, and lactose-free milks can all behave differently, and brands can differ too. If you change milk, grain amount, temperature, and finish time together, a thicker result teaches you nothing about which change worked.<\/p><h2>Cold settles the texture; straining creates a different food<\/h2><p>Freshly strained kefir can seem looser while warm and recently stirred. Refrigerate it for several hours, then pour it again before deciding the batch failed.
